I designed this placemat with precuts in mind. You should be able to cut all the pieces from the cutting list using a jelly roll. By mixing and matching your prints, you could create a set of placemats following this tutorial each featuring different prints from the Hello Luscious line. Just keep the Grunge Radish consistent for contrast and continuity.
So often, the design of a placemat is lost when it is in use and a plate is placed in the middle. I wanted to avoid that so I created a design based around the plate. In fact, the design could even help your younger “helpers” get the plate centered on the placemat when setting the table. When the plate is in position, there are still many pieces of many different fabrics in sight around the edges for lots of visual interest.

I’m glad that you like the pdf. I know I like to print the directions and bring them to my sewing machine with me and a pdf file makes it easier to do that and not waste a ton of paper!
